Lasang Pinoy 15: Recycled, Reloaded!

Yaya SisterVi of the ‘D Orfanage’ has been my cooking sidekick since arriving in Manila and as well as for the past few LP events. When she found out about this edition’s theme, she excitedly recited dishes we could possibly recycle and become as my entries. Thus, saving up leftovers for the round was her next routine.
Last week, she turned leftovers of a favourite breakfast staple – Corned Beef Hash - into another delectable breakfast treat. When I saw her work on the plating, I immediately thought that she should get the credit for it. So here, I’m proud to host Yaya SisterVi’s Corned Beef Hash Patties on Chorizo Garlic Rice - one of the two I am hosting in my blog for this round.
SisterVi, as we fondly call Sister Evillia Albios, was a former nun based in Italy for years until two years ago when she decided to come home due to health reasons. She found her way into the ‘D Orfanage’ through a friend who works in the household staff. SisterVi then became Christine’s personal assistant looking after almost everything in this part [Christine’s flat] of the ‘Orfanage,’ including counseling! With her good-natured self, warm personality, and superb culinary skills, she found her way into everyone’s heart and is considered as one rare household jewel in the ‘Orfanage.’ At the taping of a local TV show wherein I was a guest, she even volunteered to keep me company and carried my clothes and personal stuff around the studio – making me feel like a real star! LOL!

To make the patties, beat two eggs and fold-in leftover corned beef hash, and mix well. Heat some oil in a non-stick pan, pour hash and egg mixture and spread evenly in the pan as you would a pancake. Flip over when one side is done. You may have it lightly fried or have it well done in a slightly golden brown colour.
The rice, Chorizo Garlic Rice, was also made of leftover rice from the previous night’s dinner and leftover chorizos from my recent trip to Cebu.
For this experiment, SisterVi found quite an interesting way of plating it – by using ‘recycled’ tins to mold the chorizo-garlic rice and cut the corned beef patties, making them in same size and shape!
And while we were on with the experiment, she kept on blabbering instructions in her perfect Italian! Grazie, senora SisterVi!
