CRISPY PANCAKES

One of my favourite breakfast treats then at The Empire Hotel & Country Club in Brunei . . . Crispy Pancakes filled with Mozzarella Cheese and sugar served with Maple Syrup and sliced fresh fruits. Yum!
This looks wonderful. Any idea how to make it??
hi lori . . . it’s quite easy . . . pour the pancake batter into a 12-inch non-stick pan or on to a hot griddle and spread it out thinly in a round shape, approximately 10 inches. sprinkle mozzarella cheese and sugar while batter is cooking. fold pancake to a half-moon shape and cook further until desired colour and crispiness is achieved.
