Sunday Lafang:
LEFTOVER TURKEY and SINIGANG NA BABOY

The bug BIT me! The unpredictable weather here in Brunei coupled with some stress at work has got me . . . I rarely get sick but when I do I am almost naghihingalo na and I for one do not like taking any medication at all! The other night, much against my will, I took one when I couldn’t bear the pain any longer, only to find out later that the medicine was expired! LOL! Anyway, the medicine did bring some relief — muscle pains and headache were gone in almost an hour’s time. I consulted the nurse yesterday and was told that it was ok as long as it wasn’t antibiotics I’ve taken. Phew!

This morning, I woke up with, again, a heavy head, runny nose, and muscle pains. Feeling weak and lazy to call the nurse, I drank some more of the expired medicine and went to bed again! Earlier this evening, my pinoy colleague and recent guest blogger Jovic dropped by with some “unexpired” medicine [LOL!] and food!

He wanted to cook some chicken soup but instead, ended up cooking Sinigang na Baboy and some more Leftover Turkey! Didn’t we have this only a few days ago? LOL!

Wonder where he got the turkey from when we do not even celebrate Thanksgiving Day? Well, a satisfied and happy function organizer at the hotel sent a whole roasted young turkey to his place Monday night. It was left untouched in the freezer and he experimented on some leftover recipe last Thursday.

Anyway, here’s the turkey for the second time around . . .

Leftover Turkey with Mushroom Sauce

Leftover Turkey with Mushroom Sauce

Ingredients

Leftover turkey [about 1/2 kilo]
1 cup fresh mushrooms, sliced
1 onion, sliced
3 cloves garlic, crushed
4 tablespoons butter
4 tablespoons flour
1 cup turkey broth [by boiling turkey bones, with bay leaf, salt and pepper]
Salt and Pepper to taste

Method

Melt butter in a saucepan and sauté garlic, onions, and fresh mushrooms. Pour in turkey broth and simmer for a couple of minutes. Add in flour, salt and pepper to taste and stir constantly until mixture thickens. Remove sauce and set aside. Using the same saucepan, melt some butter and reheat turkey. Pour in mushroom sauce and mix until well blended.

I am not a big fan of roasted turkey or any kind of dish that has turkey in it, but this one’s simply delicious! Ate this one with pandesal!

Now, was the Sinigang Na Baboy kind of a substitute for the chicken soup . . . ? Tee hee . . . It was also a bit sour than the usual and had a spicy chili zing to it! Just as I want it! Yummy! The recipe is similar to his Sinigang Na Baka entry to LP4, just replace beef with pork.
