I’ve been collecting them since they started… recipes are simple & can be easily tweaked..

I grew up in Angeles city, and I still remember this food being served during fiesta. When I had my own family here in US , I tried to cook it once but I failed to do it right. Hopefully this time I’ll be able to cook it right, just like the way my “Apung Saring” cooked it for us.

Hi Mike!

We had brinhi for Medya Noche! Reading this blog made me think of how taxing the process of preparing the dish was but in the end it was all worth it.

Kapampangans really cook the best arroz valenciana!!! Hahaha… by the way, thanks for the tip… will try to tweak and use your advice next time.

that’s what i do too…most of the time when i cook, i tweak a lot…for as long as you know how the original taste, you can always innovate to something equally good…although i’m kapampangan, i find bringhi heavy on the tummy too becaue of the malagkit, and mixing jasmine rice with it makes sense to me…

Hi Mike! I have eaten this at Claude Tayag’s place in Pampanga…yum! Your version looks fantastic too :) I also enjoy Yummy magazine…it’s my favorite local food mag. Clean, crisp, and very current…sometimes I feel that other local food mags are writing more for “matronas” that have a legion of household help. Yummy seems to be geared at more modern independent home-cooks :)

food blogging re connects me to our culture… i never even heard this dish before….
time to experiment again… wala pa ko sarili kusina am here at the boat….
i have seen yummy someone sent me a copy of this mag…very refreshing recipes actually.
