Lasang Pinoy 15: Recycled, Reloaded!

SPICY BEEF SALPICAO

One of my readers, PaulN, who works as a call center agent in Makati was intrigued by this Lasang Pinoy edition’s recycling theme. A foodie but a non-blogger, he submits an entry using leftover steak, which I am happy to host.

Steaks can be versatile leftovers. You can recycle and turn them into a variety of delectable second servings like this one I recycled last year. For the round, PaulN whips a dish out of his mom’s leftover steak and turns them into mouth watering Beef Salpicao, beef cubes sautéed in olive oil and garlic. Having originated from Bicol, PaulN twists the dish with some hot siling labuyo [local chili]!

Beef Salpicao

Ingredients:

Leftover beef tenderloin steak, cut into ½-inch chunks
6 cloves Garlic, minced [you may add more if you like]
3 tablespoons Oyster Sauce
1 tablespoon Siling Labuyo [local chili], minced
3 tablespoons Butter
1/8 cup Beef stock
1/4 teaspoon Paprika
Ground black pepper to taste
Salt to taste
Olive oil

Method:

Combine oil, garlic, salt, pepper, chilies, and paprika in a bowl. Marinate beef chunks in garlic-oil mixture for an hour or more.

Sauté marinated beef [including marinade] in very hot oil. Keep stirring until beef chunks are browned evenly. Add oyster sauce and beef stock. Cook for a few minutes more and add butter last. Remove from heat and serve immediately over hot steamed rice.
