This has been on my wishlist since I started blogging late last year. Earlier this evening, when I called Lakay Junfon and asked him to pick-up his portion of the pasta bake, he happily informed me that he cooked this specialty dish of his and was already on the way to bring me some!

PANCIT MOLO
Having had loads of coffee with no lunch at all while rushing the LP5 round-up, what came as a serving for two persons was gone in a few minutes! [ Whatever happened to my own portion of the pasta bake then?! ]
Lakay Junfon is the only expert on Pancit Molo among the 100-plus Pinoy staff in the hotel. His Pancit Molo is really yummy — what with the extras I do not see in molos cooked by others like shredded chicken meat and prawns, which makes the soup tastier. A really warming feast for a tired soul at work!
